You might think the Peach Bellini hails from the Peach State, but in fact, it comes from a medieval Italian recipe. Prosecco is a bubbly dry Italian wine with a cornucopia of sweet fruit flavors. Peaches are beloved in Italy for their sweetness and mild acidity. Together, these two ingredients make Peach Bellini, a truly festive, flavorful beverage fizzing with fruitiness and positively pink with playfulness. No other brew can make you feel so sunny!

  • 4 medium ripe peaches, plus a few peach slices for garnish, if desired
  • 1 bottle Prosecco, chilled

Directions

Step 1 -Peel the peaches and slice them in half, removing the pits.

Step 2 -Put the peeled peaches into a blender or a food processor, and then blend them until it forms a smooth purée.

Step 3 -The peach purée is best when it is served chilled, so put it in the fridge for at least 30 minutes to chill.

Step 4 -Once you’re ready to serve, pour 2 ounces (1/4 cup) of the chilled peach purée into each champagne flute.

Step 5 -Pour the chilled Prosecco, being careful not to overflow.

Step 6 -Stir the Prosecco and peach purée until it is mixed.

Step 7 -Garnish the drink with another splash of prosecco and add a peach slice to the rim.

Step 8 -Serve cold!
