Ingredients

  • 1 pound Italian sausage, ground or links with casings removed
  • 3 large carrots, peeled and diced
  • 1 onion, finely diced
  • 1 rib celery, finely chopped
  • 1 1/2 teaspoons Italian seasoning
  • 1 teaspoon garlic, minced
  • 1 teaspoon salt
  • 3 cups low-sodium chicken broth
  • 1 (28-ounce) can diced tomatoes
  • 1 cup tomato sauce
  • 3 cups refrigerated cheese tortellini

Directions

Step 1 -In a large soup pot over medium-high heat, add the sausage and cook, while crumbling, until it is no longer pink, about 5-8 minutes.

Step 2 -Drain the excess grease from the pot.

Step 3 -Add the carrots, the onions, and the celery to the pot and cook, while stirring, until the onions have softened, about 3-5 minutes.

Step 4 -Add the Italian seasoning, the garlic, and the salt and cook, while stirring, until the garlic is fragrant, about 1 minute.

Step 5 -Add the broth, the tomatoes and their juices, and the tomato sauce and stir to combine.

Step 6 -Bring the soup mixture to a simmer.

Step 7 -Reduce the heat to medium and cover the pot.

Step 8 -Simmer the soup until the carrots are almost tender, about 15 minutes.

Step 9 -Add the tortellini and stir to combine.

Step 10 -Cover the pot and simmer until the tortellini is cooked through and the carrots are tender, about 5-6 minutes.

Step 11 -Serve.
