Ingredients

  • 2 strips bacon, cut into 1/4-inch pieces
  • 1/2 cup onions, chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 cup canned red kidney beans, rinsed and drained
  • 1/2 cup canned diced tomatoes
  • 3/4 cup frozen mixed vegetables, of your choice
  • 2 cups low-sodium chicken broth
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarsely ground black pepper
  • 1/2 cup small shell pasta

Directions

Step 1 -In a medium-sized pot over medium heat, add the bacon pieces and cook, while stirring frequently, until they are crispy, about 5-7 minutes.

Step 2 -Using a slotted spoon, transfer the bacon to a paper-towel-lined plate to drain. Leave the bacon drippings in the pot.

Step 3 -Add the onions to the hot bacon drippings in the pot and cook, while stirring, until they become slightly translucent, about 1 minute.

Step 4 -Add the garlic to the onions and cook, while stirring, until fragrant, about 30 seconds.

Step 5 -Add the Worcestershire sauce, the kidney beans, the diced tomatoes and their juices, and the mixed vegetables to the onion mixture and stir to combine.

Step 6 -Cook the bean mixture, while stirring, until it is heated through, about 1 minute.

Step 7 -Add the chicken broth to the bean mixture and stir to combine.

Step 8 -Add the bacon to the soup mixture and stir to combine.

Step 9 -Season the soup mixture with the salt and the black pepper and stir to combine.

Step 10 -Increase the heat to medium-high heat and bring the soup mixture to a gentle bubbling simmer.

Step 11 -Reduce the heat to low and allow the soup mixture to simmer, while stirring occasionally, until the flavors meld together, about 10 minutes.

Step 12 -Add the pasta to the soup and simmer until the pasta is al dente, about 6-8 minutes.

Step 13 -Serve.
