Ingredients

  • For the meatloaf:
  • 1 cup panko breadcrumbs
  • 1 cup milk
  • 1 tablespoon butter
  • 1 medium-size yellow onion, diced
  • 2 cloves garlic, minced
  • 2 pounds ground beef
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • For the topping:
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon spicy brown mustard
  • parsley, optional, to taste, chopped, for garnish

Directions

Step 1 -Preheat the oven or the grill to 350 degrees F.

Step 2 -Line a baking sheet with parchment paper or foil.

Step 3 -In a small bowl, add the breadcrumbs and the milk and stir to combine.

Step 4 -In a large sauté pan over medium-high heat, melt the butter.

Step 5 -Add the onions and cook, while stirring occasionally, until they are fragrant and slightly brown, about 3-5 minutes.

Step 6 -Reduce the heat to low.

Step 7 -Add the garlic and cook until fragrant, about 2-3 minutes.

Step 8 -Transfer the pan from the heat and allow the onion-garlic mixture to cool.

Step 9 -In a large bowl, add the ground beef, the egg, the soaked breadcrumb mixture, the Worcestershire sauce, the dried thyme, the salt, and the cooled onion-garlic mixture and use your clean hands to combine, taking care not to overwork the meat.

Step 10 -Shape the meat mixture into a loaf shape on the prepared baking sheet.

Step 11 -Using a sharp knife, cut a crisscross pattern on top of the meatloaf.

Step 12 -Bake the meatloaf for 40 minutes.

Step 13 -In a bowl, add the ketchup, the brown sugar, and the mustard and mix to combine.

Step 14 -Spread the sauce mixture over the meatloaf and bake until the meatloaf reaches an internal temperature of 160 degrees F, about 30-35 minutes.

Step 15 -Slice and serve garnished with the parsley.
