Ingredients

  • 1 (18-ounce) jar orange marmalade
  • 1/2 cup apricot preserves
  • 3 teaspoons orange zest
  • 1/3 cup orange juice
  • 10 croissants, split
  • 5 large eggs
  • 1 cup half-and-half
  • 1 teaspoon vanilla extract
  • fresh strawberries, optional, quartered, for garnish

Directions

Step 1 -Grease a 9x13-inch baking dish.

Step 2 -In a small bowl, add the marmalade, the apricot preserves, the orange zest, and the orange juice and stir or whisk to combine.

Step 3 -Spread the marmalade mixture evenly onto the bottom halves of the croissants.

Step 4 -Replace the top halves of the croissants, creating sandwiches.

Step 5 -Cut the croissant sandwiches in half.

Step 6 -Add the sandwich halves to the prepared baking dish, overlapping as needed to fit.

Step 7 -In a medium bowl, add the eggs, the half-and-half, and the vanilla extract and whisk to combine.

Step 8 -Pour the egg mixture over the sandwich halves in the baking dish.

Step 9 -Cover the baking dish and refrigerate it for at least 8 hours and up to overnight.

Step 10 -Preheat the oven to 350 degrees F.

Step 11 -Uncover the baking dish and bake until a knife inserted into the center comes out clean, about 30-45 minutes. Make sure to tent the dish with foil if the top starts to brown too quickly.

Step 12 -Serve garnished with the strawberries.
