Ingredients

  • 8 ounces bow tie pasta
  • 1 1/2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 pound zucchini, cut into cubes
  • salt, to taste
  • pepper, to taste
  • 1/2 cup parmesan cheese, grated, plus more, to taste, for garnish
  • 1/4 cup cream cheese, can substitute ricotta
  • red pepper flakes, optional, to taste, for garnish

Directions

Step 1 -In a large pot of salted, boiling water, cook the bow tie pasta to al dente, according to the package directions.

Step 2 -Reserve about 1/2 cup of the pasta water and drain the remainder.

Step 3 -In a large pan, add the olive oil.

Step 4 -Add the garlic to the heated oil and cook until it is fragrant, about 30 seconds.

Step 5 -Add the zucchini cubes, the salt, and the pepper, to the garlic and toss to combine.

Step 6 -Cook the zucchini-garlic mixture until the zucchini cubes have slightly browned and softened, about 8-10 minutes.

Step 7 -Add the cooked bow tie pasta to the zucchini-garlic mixture and stir to combine.

Step 8 -Add 1/2 cup of the parmesan cheese and the cream cheese to the pasta mixture and cook over medium-high heat, stirring frequently, about 1 minute.

Step 9 -Add 1-2 tablespoons of the reserved pasta water to the pasta mixture and stir to combine. If the sauce still seems too thick, add a little more of the pasta water.

Step 10 -Serve the pasta garnished with the extra parmesan cheese and the red pepper flakes.
