Ingredients

  • 1 (20-ounce) can unsweetened pineapple tidbits
  • 4 (4.5-5-ounce) chicken thighs, bone-in and skin-on
  • 3/4 teaspoon salt
  • 1/2 teaspoon lemon pepper seasoning
  • 2 teaspoons olive oil
  • 1 tablespoon butter
  • 2 tablespoons maple syrup
  • brown rice, to taste, cooked and warm

Directions

Step 1 -Drain the pineapple tidbits, reserving 1/4 cup of the juices and discarding the remainder.

Step 2 -Evenly sprinkle each of the chicken thighs with the salt and the lemon pepper seasoning.

Step 3 -In a large skillet over medium-high heat, add the oil.

Step 4 -Add the seasoned chicken thighs to the heated oil and cook until they are browned, about 5 minutes per side. Transfer them to a plate. Note: They will not be cooked through.

Step 5 -In the same skillet over medium heat, melt the butter.

Step 6 -Add the drained pineapple tidbits to the melted butter and cook, while stirring, about 5 minutes.

Step 7 -Stir the maple syrup and the reserved pineapple juice into the pineapple tidbits.

Step 8 -Add the browned chicken thighs to the pineapple mixture, cover the skillet, and cook until the meat reaches an internal temperature of 165 degrees F, about 10-15 minutes.

Step 9 -Transfer the cooked chicken thighs to a clean plate and cover to keep them warm.

Step 10 -Increase the heat to medium-high and cook the pineapple mixture, while stirring, until it slightly thickens.

Step 11 -Evenly plate the rice and top with the cooked chicken thighs and the pineapple mixture.

Step 12 -Serve.
