This slow cooker delight is loaded with juicy ground pork, tender bites of cabbage and carrots, and plenty of soy umami and fragrant spices! The Homework Bowl feels like the opposite of work to eat and enjoy!

Ingredients

  • 1 pound ground pork
  • 1 medium onion, finely chopped
  • 2 teaspoons garlic, minced
  • 2 tablespoons sesame oil
  • 1 teaspoon ground ginger
  • 2/3 cup chicken broth
  • 1 1/2 tablespoons rice vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 (16-ounce) bag coleslaw mix
  • 3/4 cup carrots, shredded
  • 4 green onions, optional, sliced, for garnish

Directions

Step 1 -In a skillet over medium-high heat, add the ground pork and cook, while crumbling, until it is no longer pink, about 5-7 minutes.

Step 2 -Drain the excess fat from the skillet.

Step 3 -In a slow cooker, add the onions, the garlic, the sesame oil, and the ground ginger and stir to combine.

Step 4 -Add the cooked ground pork to the onion mixture and stir to combine.

Step 5 -Add the chicken broth, the rice vinegar, the soy sauce, and the hoisin sauce to the pork mixture and stir to combine.

Step 6 -Top the pork mixture with the coleslaw mix and the carrots. Do not stir.

Step 7 -Cover the slow cooker and cook on low until the flavors meld together and the coleslaw and the carrots have softened, about 2-3 hours.

Step 8 -Stir the coleslaw mixture and the carrots into the pork mixture until well-combined.

Step 9 -Serve garnished with the green onions.
