Homestyle Beef & Noodles are just the thing to make when you need to use up all that leftover pot roast in the fridge. The buttery egg noodles that are cooked in beef broth are the perfect complement to the tender, meaty beef. And that's it. Nothing fancy or crazy with Homestyle Beef & Noodles. Just good flavor and in a hurry!
Ingredients
- 4 cups beef broth
- 2 cups water
- 1 (12-ounce) package egg noodles
- 3 cups leftover pot roast
- fresh parsley, optional, to taste, torn, for garnish
Directions
Step 1 -In a large soup pot, add the beef broth and the water and stir to combine.
Step 2 -Bring the broth mixture to a boil.
Step 3 -Add the egg noodles to the broth mixture and cook until al dente, according to the package directions.
Step 4 -Drain the noodles and return them to the soup pot.
Step 5 -In a microwave-safe bowl, add the leftover pot roast and its juices and microwave until warmed.
Step 6 -Shred the pot roast with two forks.
Step 7 -Add the pot roast and its juices to the noodles in the pot and stir to combine.
Step 8 -Serve sprinkled with the parsley.
