Ingredients
- 2 tablespoons salted butter
- 1 medium shallot, chopped
- 2 tablespoons all-purpose flour
- 1 3/4 cups half-and-half
- 3 cups peas, thawed if frozen
- 2 teaspoons white vinegar
- nutmeg, to taste, freshly grated
- 1/2 teaspoon kosher salt
- black pepper, to taste
- 1/2 cup crispy fried onions
Directions
Step 1 -In a medium saucepan over medium heat, melt the butter.
Step 2 -Add the shallots to the melted butter and cook, while stirring, until just softened but not browned, about 1-2 minutes.
Step 3 -Add the flour to the shallots and cook, while stirring, until incorporated and bubbly, about 1 minute.
Step 4 -Slowly add the half-and-half to the flour-shallot mixture, while stirring.
Step 5 -Bring the sauce mixture to a simmer.
Step 6 -Add the peas and cook, while stirring, until the sauce is thickened and the peas are just tender, about 5-7 minutes.
Step 7 -Add the vinegar, the nutmeg, the salt, and the black pepper and stir to combine.
Step 8 -Pour the creamed peas into a serving bowl.
Step 9 -Serve topped with the fried onions.
