Ingredients

  • 1 large head cauliflower, grated
  • 8 slices bacon, chopped
  • 10 large eggs
  • 1 cup whole milk
  • 2 cloves garlic, minced
  • 2 teaspoons paprika
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 cups cheddar, shredded
  • 2 green onions, thinly sliced, plus more for garnish
  • hot sauce, to taste, for serving

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Place the grated cauliflower in a 9x13-inch baking dish.

Step 3 -In a large skillet over medium heat, cook the bacon until crispy, about 8 minutes.

Step 4 -Transfer the bacon to a paper-towel-lined plate.

Step 5 -In a large bowl, whisk together the eggs, the milk, the garlic, the paprika, the salt, and the pepper.

Step 6 -Top the cauliflower with the cheddar, the bacon, the green onions, and the egg mixture.

Step 7 -Bake until the eggs are set and the top is golden, about 35-40 minutes.

Step 8 -Garnish with the hot sauce and the green onions.
