The old advertisements for Guinness® beer used to proclaim that it was a "lovely day for a Guinness." Whether or not that is true, we can say one thing for certain: it's a lovely day for a Guinness Chocolate Cake. The deep maltiness of the stout with the floral bittersweetness of chocolate makes for a match made in heaven that's just heavenly on the tastebuds; the fact that the flavor comes packaged in a tender cake makes it all the sweeter (pun intended). On top is a frosting that resembles a head of foam and brings tanginess, creaminess, and luscious thickness. Guinness Chocolate Cake ensures that today is going to be lovely indeed!
Ingredients
- For the cake:
- 9 ounces unsalted butter, melted
- 1 cup Guinness beer
- 3/4 cup all-natural unsweetened cocoa powder, measured before sifting
- 1 3/4 cups granulated sugar
- 2/3 cup sour cream
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 cups plus 2 tablespoons all-purpose flour
- 2 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- For the icing:
- 1/2 cup whipping cream
- 12 ounces cream cheese, room temperature
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease the bottom of a straight-sided tube pan and line the bottom with parchment paper.
Step 3 -Grease the sides, the center tube, and the parchment paper.
Step 4 -Add the melted butter to a large mixing bowl.
Step 5 -Add the beer, the cocoa powder, and the granulated sugar, whisking until blended.
Step 6 -In a small mixing bowl, combine the sour cream, the eggs, and the vanilla, whisking until smooth.
Step 7 -While gently whisking the beer mixture, slowly pour the sour cream mixture into the large mixing bowl.
Step 8 -Combine the flour, the baking soda, and the salt in a bowl.
Step 9 -Fold the flour mixture into the beef mixture and whisk until blended.
Step 10 -Pour the batter into the prepared pan.
Step 11 -Bake until a wooden toothpick comes out clean or with only moist clean crumbs, about 45-50 minutes.
Step 12 -Allow the cake to cool completely.
Step 13 -In a small, cold bowl, beat the whipping cream until soft peaks form.
Step 14 -In a medium mixing bowl, beat the cream cheese, the powdered sugar, and the vanilla together until smooth.
Step 15 -Add the whipped cream to the cream cheese mixture and fold until combined.
Step 16 -Top the cooled cake with dollops of icing to better resemble foam on beer.
Step 17 -Slice and serve.
