Ingredients
- 1 tablespoon olive oil
- 1 yellow onion, finely diced
- 1/2 pound ground beef
- 2 tablespoons all-purpose flour
- 1 (8-ounce) can tomato sauce
- 2 cups beef broth
- 8 ounces pasta shells
- 4 ounces cheddar cheese, shredded
- 2 tablespoons relish
- 2 green onions, optional, sliced, for garnish
Directions
Step 1 -In a large, deep skillet over medium heat, add the olive oil.
Step 2 -Add the onions and the ground beef to the hot oil and cook, while crumbling the beef, until the meat is no longer pink and the onions are soft and translucent, about 5-7 minutes.
Step 3 -Drain the excess fat from the skillet.
Step 4 -Add the flour to the beef mixture and cook, while stirring, until the flour coats the bottom of the skillet and the raw flour smell disappears, about 1 minute.
Step 5 -Add the tomato sauce and the beef broth to the beef mixture and stir to combine, while scraping the bottom of the skillet to release the browned bits.
Step 6 -Add the pasta shells to the beef mixture and stir to combine.
Step 7 -Cover the skillet with a lid and increase the heat to medium-high.
Step 8 -Allow the liquids of the beef mixture to come to a boil.
Step 9 -Quickly stir the beef mixture, while scraping the bottom to release any stuck pasta shells and cover the skillet with the lid again.
Step 10 -Reduce the heat to low.
Step 11 -Let the beef mixture simmer, while stirring occasionally and replacing the lid immediately after stirring, until the pasta is tender and the sauce has thickened, about 10 minutes.
Step 12 -Turn off the heat.
Step 13 -Add the cheddar cheese to the beef mixture and stir to combine until it melts into the sauce.
Step 14 -Add the relish to the beef mixture and stir to combine.
Step 15 -Serve hot garnished with the green onions.
