Ingredients

  • For the taquitos:
  • 3 ounces cream cheese, room temperature
  • 1/3 cup salsa
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1 cup Monterey Jack cheese and/or cheddar cheese, shredded
  • 2 cups chicken, cooked, chopped or shredded
  • 12 small whole-grain tortillas, warmed
  • olive oil cooking spray, to taste
  • kosher salt, to taste
  • For dipping:
  • salsa, to taste
  • guacamole, to taste
  • Greek yogurt, to taste
  • sour cream, to taste

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Line an 18x26-inch baking sheet with parchment paper.

Step 3 -In a large bowl, add the cream cheese, the salsa, the chili powder, the cumin, and the garlic powder and mix well.

Step 4 -Add the shredded cheese and the chicken to the cream cheese mixture and mix well.

Step 5 -Place the tortillas on a flat surface and top each of them with 3 tablespoons of the chicken mixture, positioned in a line across the lower third of the tortilla.

Step 6 -Roll the filled tortillas up tightly and place them, seam-side down, on the prepared baking sheet.

Step 7 -Lightly spray the tops of the taquitos with the olive oil cooking spray and sprinkle with the salt.

Step 8 -Bake the taquitos until they are lightly browned, about 15 minutes.

Step 9 -Serve the taquitos with the salsa, the guacamole, the Greek yogurt, and the sour cream for dipping.
