Ingredients
- 1/2 (16-ounce) box short pasta, like penne, rigatoni, or casarecce, regular or gluten-free
- 2 tablespoons olive oil
- 2 tablespoons salted butter
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/4 cup parmesan cheese, grated, plus more, to taste
- 1/4 teaspoon kosher salt, plus more, to taste
Directions
Step 1 -In a large pot of salted boiling water, cook the pasta to al dente, according to the package directions.
Step 2 -Transfer the cooked pasta from the stovetop to drain, retaining 1/2 cup of the pasta water for the sauce.
Step 3 -Set cooked pasta and pasta water aside.
Step 4 -In a large skillet over medium-low heat, add the olive oil and the butter to heat.
Step 5 -Add the garlic and the red pepper flakes to the olive oil mixture and cook until fragrant and the garlic just starts to turn golden, about 2-3 minutes.
Step 6 -Quickly transfer the skillet with the garlic mixture from the stovetop to a wire rack to prevent the garlic from burning.
Step 7 -Add the drained pasta, the grated parmesan cheese, the kosher salt, and 2-3 tablespoons of the pasta water, adding more of the pasta water as needed, and stirring until saucy and well-combined.
Step 8 -Taste and add additional parmesan cheese and/or salt as desired.
Step 9 -Plate and serve.
