Ingredients

  • For the pork tenderloin:
  • olive oil, to taste, for grilling
  • 1 pork tenderloin
  • 1/4 cup dry rub seasoning
  • For the chimichurri sauce:
  • 1 bunch cilantro leaves
  • 1/2 cup olive oil
  • 1 small onion, quartered
  • 1/2 teaspoon salt
  • 2 cloves garlic
  • 2 tablespoons apple cider vinegar

Directions

Step 1 -Brush the grill grates with the olive oil.

Step 2 - Preheat the grill to medium heat.

Step 3 -Rub the pork all over with the dry rub seasoning and place it in a dish.

Step 4 -Cover the pork and keep it in the refrigerator until ready to grill.

Step 5 -Grill the tenderloin, rotating it to ensure all sides are browned, until its internal temperature reaches 145 degrees F, about 20 to 25 minutes.

Step 6 -Add the cilantro leaves, the remaining olive oil, the onion, the salt, the garlic, and the apple cider vinegar to a blender and pulse, scraping the sides as needed, until smooth, about 1 minute.

Step 7 -Slice the pork diagonally and drizzle it with the chimichurri sauce.
