Ingredients

  • vegetable oil, to taste, for frying
  • 1 1/2-2 pounds fresh cod, cut into 4 servings
  • salt, to taste
  • pepper, to taste
  • 1/2 cup all-purpose unbleached flour
  • 2 large eggs
  • 2 tablespoons cold water
  • 2 cups plain breadcrumbs
  • 1/2 teaspoon dried mustard powder
  • 1/4 teaspoon cayenne pepper
  • lemon wedges, to taste, for serving
  • malt vinegar, to taste, for serving

Directions

Step 1 -In a large skillet over medium-high heat, heat 2 inches of the oil. To see if the oil is hot enough, drop a 1-inch cube of white bread into it, checking to see that it browns in a 40 count.

Step 2 -Season the cod with the salt and the pepper.

Step 3 -In a pie tin, add the flour.

Step 4 -In a second pie tin, combine the eggs and the water.

Step 5 -In a third pie tin, add the breadcrumbs, the mustard, and the cayenne and mix to combine.

Step 6 -Coat the cod in the flour, then the egg mixture, and finally the breadcrumbs mixture.

Step 7 -Gently set the coated cod into the hot oil and fry until it reaches an internal temperature of 145 degrees F and both sides are golden-brown, about 5 minutes per side.

Step 8 -Transfer the cod to drain on brown paper sacks.

Step 9 -Serve the cod with the lemon wedges and the malt vinegar.
