Ingredients

  • For the meatballs:
  • 2 pounds ground chicken
  • 1 1/2 cups panko breadcrumbs
  • 2 eggs
  • 1/4 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon parsley, chopped
  • salt, to taste
  • pepper, to taste
  • cooking spray, to taste
  • For the sauce:
  • 1/2 cup Buffalo sauce
  • 1/2 cup light brown sugar
  • 2 tablespoons soy sauce
  • Optional, for topping:
  • parsley, to taste, chopped
  • crushed red pepper flakes, to taste

Directions

Step 1 -Preheat the broiler on high.

Step 2 -Line a baking sheet with foil.

Step 3 -In a large bowl, combine the chicken, the breadcrumbs, the eggs, the onion, the garlic, and 1 tablespoon of the parsley.

Step 4 -Season generously with the salt and the pepper.

Step 5 -Roll the chicken mixture into 1-inch meatballs and place them on the prepared baking sheet.

Step 6 -Spray the meatballs with nonstick cooking spray.

Step 7 -Broil the meatballs until browned, about 6 minutes on each side, flipping halfway through.

Step 8 -Place the browned meatballs into a slow cooker.

Step 9 -Add the Buffalo sauce, the brown sugar, and the soy sauce.

Step 10 -Cover and cook on low for 2 hours.

Step 11 -Serve hot topped with the extra parsley and the red pepper flakes.
