Ingredients

  • 2 tablespoons olive oil
  • 7 cups fresh spinach
  • 3 cloves garlic, minced
  • 7 ounces cream cheese, softened
  • 1 cup feta cheese, crumbled
  • 1 cup plain Greek yogurt
  • French bread, optional, to taste, sliced and toasted, for serving

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -In a large, ovenproof skillet over medium heat, add the olive oil.

Step 3 -Add the spinach to the hot oil and cook, while stirring, until softened, about 3-5 minutes.

Step 4 -Add the garlic to the spinach and cook, while stirring, until fragrant, about 2 minutes.

Step 5 -Turn off the heat and set the spinach aside.

Step 6 -In a large bowl, add the cream cheese, the feta cheese, and the yogurt and using an electric handheld mixer, beat to combine.

Step 7 -Add the spinach mixture to the cream cheese mixture and stir to combine until the spinach is fully incorporated.

Step 8 -Transfer the cream cheese mixture back to the ovenproof skillet.

Step 9 -Bake until heated through, about 15-20 minutes.

Step 10 -Serve with the toast slices.
