If you’ve ever wished your meatloaf could be less mushy, this Skillet Meatloaf forms a nice little crust from being cooked in a hot pan. The barbecue sauce added on top and then broiled forms a sweet, tomatoey glaze. It’s a different way to prepare an American favorite. Ingredients

  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup breadcrumbs, fine dried
  • 1 tablespoon olive oil
  • 1 1/2 cups onion, diced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 cloves garlic, minced
  • 1 1/2 pounds ground beef, preferably ground sirloin
  • 8 ounces ground pork
  • 1/3 cup barbecue sauce

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -In a large bowl, whisk together the eggs, milk, and Worcestershire sauce.

Step 3 -Add the breadcrumbs and stir until fully combined.

Step 4 -Over medium-high heat, heat the olive oil in a cast-iron skillet. Once hot, add the onion, salt, and pepper until the onions are tender, about 15 minutes.

Step 5 -Add the garlic and cook until fragrant, about 1 minute.

Step 6 -Once slightly cooled, add the onion mixture to the egg mixture.

Step 7 -Add in the beef and pork until combined. You may need to use your fingers. Transfer the meatloaf back to the skillet and press it evenly into the skillet.

Step 8 -Bake the meatloaf for 25-30 minutes, or a meat thermometer reads 165 degrees F.

Step 9 -Once cooked through, remove the skillet from the oven and turn on the broiler. Brush the meatloaf with the barbeque sauce.

Step 10 -Broil the meatloaf for about 3 minutes. Allow the meatloaf to cool slightly before serving.
