Ingredients

  • 2 chicken breasts, boneless and skinless, halved lengthwise
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes, optional
  • 1 cup marinara sauce
  • 1 cup parmesan cheese, grated
  • 1 1/2 cups mozzarella, shredded
  • 1/2 cup pork rinds, optional, crushed
  • 1 tablespoon basil, optional, chopped, for garnish

Directions

Step 1 -In a shallow plate, add the chicken cutlets.

Step 2 -Coat the chicken cutlets in the olive oil and season them with the Italian seasoning, the garlic powder, the salt, the black pepper, and the red pepper flakes.

Step 3 -Allow the chicken to marinate for 5 minutes.

Step 4 -Preheat the oven to 400 degrees F.

Step 5 -Lightly grease a 9x13-inch baking dish with cooking spray.

Step 6 -Add the chicken cutlets to the prepared baking dish and spread them out evenly.

Step 7 -Pour the marinara sauce over the chicken cutlets.

Step 8 -Top the chicken cutlets evenly with the parmesan cheese, the mozzarella cheese, and the crushed pork rinds.

Step 9 -Bake until the chicken cutlets reach an internal temperature of 165 degrees F and the cheese is melted and bubbly, about 25 minutes.

Step 10 -Serve garnished with the basil.
