Ingredients

  • 4 (6-8-ounce) fresh salmon steaks, cut 1-inch-thick, rinsed and patted dry
  • 3/4 cup bourbon
  • 1/2 cup brown sugar, packed
  • 2 tablespoons honey
  • 2 teaspoons soy sauce
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground black pepper
  • neutral-flavored oil, to taste, for greasing the grill grates

Directions

Step 1 -In a shallow baking dish or a resealable plastic bag, add the salmon steaks.

Step 2 -In a small bowl, add the bourbon, the brown sugar, the honey, the soy sauce, the ginger, and the pepper and stir to combine.

Step 3 -Pour the marinade mixture over the salmon steaks in the dish, then cover the dish tightly.

Step 4 -Transfer the baking dish to the refrigerator and let the salomn steaks marinate, while turning the steaks occasionally, for at least 1 hour.

Step 5 -Lightly grease a grill rack with the oil.

Step 6 -Preheat the grill to medium heat.

Step 7 -Transfer the salmon steaks from the marinade to the grill, reserving the marinade.

Step 8 -Cook the salmon steaks, covered, turning them once, and brushing them with the reserved marinade halfway through, until the steaks begin to flake easily with a fork and they reach an internal temperature of 145 degrees F, about 8-12 minutes.

Step 9 -Discard any of the remaining marinade.

Step 10 -Serve.
