Oh yes, life is like a dream! Well, at least it is when you have Dreamy Key Lime Bars on the table! Fluffy, creamy, bright, and summery key lime flavor is the perfect balance of sweetness and tartness, piled high atop a buttery and crumbly graham cracker crust. Ingredients
- 12 squares low-fat honey graham crackers, finely crushed
- 1/4 cup butter, melted
- 1 teaspoon sugar
- 1 (0.3-ounce) package sugar-free low-calorie lime-flavored gelatin
- 3/4 cup water, boiling
- 1 1/2 cups low-fat or fat-free cottage cheese
- 1 (8-ounce) container reduced-fat cream cheese or Neufchâtel cheese, softened and chopped
- 1 (8-ounce) container frozen light or fat-free whipped dessert topping, thawed
- key limes or limes, optional, to taste, sliced, for topping
Directions
Step 1 -In a small bowl, combine the graham cracker crumbs, the butter, and the sugar.
Step 2 -Press the crumb mixture into the bottom of a 2-quart square baking dish.
Step 3 -Refrigerate the graham cracker crust while preparing the filling.
Step 4 -In large bowl, add the lime gelatin and the boiling water and stir until the gelatin is dissolved.
Step 5 -In blender or food processor, add the cottage cheese and the cream cheese, then cover and process until smooth, stopping several times to scrape down the sides.
Step 6 -Whisk 1/2 cup of the cottage cheese mixture into the gelatin mixture.
Step 7 -Whisk the remaining cottage cheese mixture into the gelatin mixture until smooth.
Step 8 -Fold the whipped dessert topping into the gelatin mixture.
Step 9 -Spoon the filling mixture over the chilled graham cracker crust.
Step 10 -Cover and chill the bars until the filling is firm, at least 8 hours and up to 24 hours.
Step 11 -Cut the bars into squares and top with the lime slices.
Step 12 -Serve.
