Ingredients

  • 5 eggs, not beaten, plus 1 beaten egg, divided
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (8-ounce) can refrigerated crescent rolls
  • 8 slices bacon, cooked
  • 1 cup cheddar cheese, shredded
  • parsley, optional, to taste, chopped, for garnish

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -In a bowl, add 5 of the unbeaten eggs, the red bell pepper, the green bell pepper, the salt, and the pepper and whisk to combine.

Step 3 -In a skillet over medium heat, add the egg mixture and scramble until fully cooked.

Step 4 -Separate the crescent roll triangles and lay them on a sheet of parchment paper, with the long points of the triangles facing outward and the bases overlapping.

Step 5 -Lay a slice of the bacon onto each of the triangles.

Step 6 -Sprinkle 1/2 of the cheese over the ring.

Step 7 -Add the scrambled egg mixture on top of the cheese and sprinkle with the remaining cheese.

Step 8 -Fold the triangles over and tuck the points under.

Step 9 -Brush the ring with the remaining beaten egg.

Step 10 -Carefully transfer the parchment paper onto a baking sheet.

Step 11 -Bake the ring until the dough is cooked and golden-brown, about 20 minutes.

Step 12 -Garnish the ring with the parsley.

Step 13 -Slice and serve.
