These Derby Sliders will certainly win a garland of roses for their warm barbecue flavors wrapped around the juicy, shredded chicken. Ingredients

  • 3 cups chicken breast, boneless and skinless, cooked and shredded
  • 1 1/4 cups Meat Mitch BBQ Sauce
  • 12 slider buns, tops and bottoms separated
  • 1 cup mozzarella cheese, shredded
  • 1 cup smoked Gouda cheese, shredded
  • 1/2 cup red onion, thinly sliced
  • 2 tablespoons butter, melted
  • 2 tablespoons fresh cilantro leaves, plus more, optional, to taste, for garnish

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Grease a 3-quart rectangular baking dish.

Step 3 -In a large bowl, add the shredded chicken and the barbecue sauce and toss to combine.

Step 4 -Arrange the bottoms of the slider buns in the prepared baking dish and top with the chicken-barbecue mixture, the mozzarella, the Gouda, and the onions, then return the tops of the slider buns.

Step 5 -Brush the tops of the sliders with the melted butter and sprinkle with 2 tablespoons of the cilantro leaves.

Step 6 -Cover the baking dish with foil and bake, about 15 minutes.

Step 7 -Discard the foil and bake the sliders until they are heated through and the cheese has melted, about 10-15 minutes.

Step 8 -Garnish the sliders with the extra cilantro leaves and serve.
