All the greatness of the classic Reuben sandwich, baked into casserole form; that's like a city of flavors rolled into one dish! Delicatessen Casserole has plenty of beefy, succulent pastrami, vibrant rye bread, sour and tangy pickles, and melty Swiss cheese all joined together with a creamy, zesty Thousand Island dressing coating it all. You can even say that Delicatessen Casserole is like having one giant Reuben sandwich! That's one way to ensure you get enough of that amazing and craveable taste!
Ingredients
- 6 slices light or dark rye bread, divided
- 1 pound pastrami, thinly sliced
- 1 (14.5 ounce) package sauerkraut, drained
- 1 cup dill pickles, chopped
- 2 teaspoons caraway seeds
- 4 cups Swiss cheese, shredded
- 1 cup milk
- 3 large eggs, beaten
- 1/3 cup yellow mustard
- 1/3 cup Thousand Island dressing
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Coat a deep 7x11–inch baking dish with nonstick cooking spray.
Step 3 -Cut 4 slices of the rye bread into 2-inch squares.
Step 4 -In a food processor, pulse the remaining bread slices until they become fine breadcrumbs.
Step 5 -Place the cubed bread in the bottom of the prepared baking dish.
Step 6 -Evenly cover the cubed bread with 1/2 of the pastrami.
Step 7 -Evenly spread the drained sauerkraut, the pickles, and 1 teaspoon of the caraway seeds over the pastrami layer.
Step 8 -Sprinkle the casserole with 1/2 of the Swiss cheese and then the remaining pastrami.
Step 9 -Gently push down on the pastrami to ensure the casserole is as compact as possible.
Step 10 -Sprinkle the casserole with the remaining Swiss cheese and the remaining caraway seeds.
Step 11 -In a medium bowl, whisk the milk, the eggs, the mustard, and the Thousand Island dressing until well-combined.
Step 12 -Pour the dressing mixture over the casserole and top it evenly with the breadcrumbs.
Step 13 -Cover the casserole with aluminum foil and bake until it is heated through and all the cheese is melted, about 45 minutes.
Step 14 -Transfer the casserole from the oven and let it cool for 5 minutes.
Step 15 -Serve.
