When you promise yourself that you're only going to make one pass through the potluck line, it'll be the Come-Back Macaroni Salad that'll coax you into a second round and another big serving of all your food favorites. Packed full of juicy veggies and bouncy macaroni, you won't be able to resist the totally creamy and slightly spicy goodness this spectacular side dish brings to the table. If Come-Back Macaroni Salad is part of the spread, just assume you're going back (at least) one more time. It's just too good to only enjoy once!
Ingredients
- 3 cups De Cecco Elbows Pasta
- 1 cup ham, cooked and chopped
- 1 cucumber, peeled and seeded, diced
- 1 tomato, seeded and diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 1/4 cups mayonnaise
- 1 1/2 teaspoons McCormick Perfect Pinch Cajun Seasoning
- 2 teaspoons lemon juice
- Morton's Sea Salt, to taste
Directions
Step 1 -In a large pot of salted, boiling water, cook the macaroni to al dente, according to the package directions.
Step 2 -Drain the pasta water and rinse the cooked macaroni under cold water until it is cool.
Step 3 -In a large bowl, add the cooled macaroni, the ham pieces, the cucumbers, the tomatoes, the red bell peppers, the yellow bell peppers, the green bell betters, the mayonnaise, the Cajun seasoning, the lemon juice, and the salt and stir until it is well-combined.
Step 4 -Tightly cover the bowl and chill the macaroni salad in the refrigerator for at least 2 hours and up to 8 hours.
Step 5 -Serve.
