Here's a grilled chicken to get you dancing! Can-Can Chicken uses beer straight from the can (hence the name) to steam the meat, keeping it moist and infusing it with malty, roasted flavors. With a sweet, savory, and smoky rub coat, Can-Can Chicken has a depth of flavor other grilled chicken can only dream of. You'll really get a kick out of Can-Can Chicken!

Ingredients

  • 1 tablespoon kosher salt
  • 1 teaspoon sugar
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground mustard
  • 1 (3.5-4-pound) broiler/fryer chicken
  • 1 (12-ounce) can of beer

Directions

Step 1 -In a small bowl combine the salt, sugar, onion powder, garlic powder, cayenne pepper, paprika, and mustard.

Step 2 -Carefully loosen the skin from the chicken, mindful not to tear it or remove it.

Step 3 -Rub the seasoning mixture under and over the skin of the chicken.

Step 4 -Tuck the wings under the chicken.

Step 5 -Cover and refrigerate for 1 hour.

Step 6 -Preheat the grill on medium heat.

Step 7 -Completely cover all sides of a 9-inch baking dish with foil.

Step 8 -Securely place a beer can chicken rack in the baking pan.

Step 9 -Remove half the beer from the beer can and create additional openings in the top of the can.

Step 10 -Place the can in the rack.

Step 11 -Stand the chicken vertically on the rack.

Step 12 -Place the rack on the grill rack.

Step 13 -Grill the chicken, covered, over indirect heat until a meat thermometer inserted into the thickest part reads 165 degrees F, about 75-90 minutes.

Step 14 -Carefully remove the chicken and rack from the grill.

Step 15 -Tent the chicken with foil.

Step 16 -Let the chicken stand for 15 minutes.

Step 17 -Carve and serve.
