After a fun day of picking, aren't you always just so excited to put those juicy blueberries to good use?! We don't blame you. But you're also sort of tired from being in the sun, so you definitely want something that's not too complicated to make, right? We've got you covered for all of the above! These Blueberry Oat Squares are ready in under 1 hour and 15 minutes, with most of that being baking and cooling time! So, with very little effort, you'll soon be enjoying bites of your freshly picked blueberries, hugged between two layers of buttery, brown sugary, cinnamon-y oats! Yum! These Blueberry Oat Squares are delicious enough to get your fix and simple enough to let you relax while doing it. That's a win-win, for sure. What a perfect ending to a perfect day!
Ingredients
- For the crust:
- 3/4 cup butter, room temperature
- 1/2 cup brown sugar
- 1 1/2 cups rolled oats
- 3/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- salt, to taste
- For the blueberry layer:
- 2 cups blueberries, fresh or frozen
- 3 tablespoons granulated sugar
- 2 tablespoons lemon juice
- 2 teaspoons cornstarch
- For the oat topping:
- 3 tablespoons butter
- 3/4 cup rolled oats
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
Directions
Step 1 -Preheat the oven to 300 degrees F.
Step 2 -In a large bowl, use an electric mixer to cream 3/4 cup of the butter with 1/2 cup of the brown sugar until light and fluffy.
Step 3 -Add 1 1/2 cups of the rolled oats, the flour, the vanilla, the baking powder, and the salt to the butter mixture and mix until fully-combined.
Step 4 -Transfer the crust mixture to a 9-inch square baking pan, pressing down to create an even layer.
Step 5 -In a large mixing bowl, combine the blueberries, the granulated sugar, the lemon juice, and the cornstarch.
Step 6 -Evenly distribute the blueberry mixture over the crust.
Step 7 -In a shallow saucepan, melt the remaining butter over medium heat.
Step 8 -Transfer the melted butter from the heat and stir in the remaining oats, the remaining brown sugar, and the cinnamon.
Step 9 -Sprinkle the oat topping over the blueberry layer.
Step 10 -Bake the blueberry mixture until lightly browned, about 30-35 minutes.
Step 11 -Let the blueberry mixture cool completely on a wire cooling rack.
Step 12 -Cut into squares and serve.
