If you've never tasted Betty's Famous Banana Cream Pie, well now is your chance! Known for its creamy, banana filling (the name really says it all), this chilled treat is loved by many for a good reason. It takes some time to come together, with most of that time either cooling or chilling, but each bite of yummy goodness is worth every minute of effort you put into it. We don't know who Betty is, but Betty's Famous Banana Cream Pie proves she knows what she's doing!
Ingredients
- 1/2 (14.1-ounce, 2-count) box refrigerated pie crust dough, remaining dough reserved for another use
- 1/3 cup all-purpose flour
- 3/4 cup sugar
- 1/4 teaspoon salt
- 2 cups whole milk
- 3 large egg yolks
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 3 medium bananas, firm and sliced, plus more, to taste, for garnish
- whipped cream, to taste, for garnish
Directions
Step 1 -Place the pie crust dough in a 9-inch pie plate and flute the edges.
Step 2 -Refrigerate the pie crust, about 30 minutes.
Step 3 -Preheat the oven to 425 degrees F.
Step 4 -Line the pie crust with two layers of foil and fill with pie weights, dried beans, or uncooked rice.
Step 5 -Bake the pie crust on the lower oven rack until the edges are golden-brown, about 12-15 minutes.
Step 6 -Discard the foil and the weights, then bake the pie crust until the bottom is golden-brown, about 2-3 minutes.
Step 7 -Place the pie plate on a wire rack and let the pie crust cool.
Step 8 -In a saucepan, add the flour, the sugar, and the salt and stir to combine.
Step 9 -Stir the milk into the sugar mixture and mix well. Cook over medium-high heat until it has thickened and is bubbly.
Step 10 -Reduce the heat and cook the milk mixture, while stirring, about 2 minutes.
Step 11 -Transfer the saucepan from the heat.
Step 12 -In a medium bowl, lightly beat the egg yolks.
Step 13 -Stir a small amount of the milk mixture into the beaten egg yolks.
Step 14 -Add the egg-milk mixture to the milk mixture in the saucepan, transfer the pan back to the stovetop, and bring it to a gentle boil. Cook, stirring constantly, about 2 minutes.
Step 15 -Transfer the saucepan from the heat.
Step 16 -Gently stir the butter and the vanilla into the pie filling.
Step 17 -Pour the pie filling into a bowl, then press plastic wrap onto the surface of the pie filling and refrigerate, about 30 minutes.
Step 18 -Pour 1/2 of the chilled pie filling into the crust and top with 3 of the sliced bananas.
Step 19 -Pour the remaining pie filling over the banana slices.
Step 20 -Decorate with the whipped cream, as desired.
Step 21 -Chill the pie in the refrigerator for at least 6 hours and up to overnight.
Step 22 -Slice and serve the pie garnished with the extra banana slices.
