Ingredients

  • 2/3 cup unsalted butter, preferably high-fat European or European-style, plus more, to taste, for greasing the baking dish
  • cocoa powder, to taste, for dusting the baking dish
  • 5 ounces unsweetened chocolate, such as Ghirardelli® 100% cacao unsweetened chocolate bar, broken into pieces
  • 2 teaspoons vanilla extract, preferably good-quality
  • 4 eggs, preferably organic
  • 1/2 teaspoon sea salt
  • 2 cups granulated sugar
  • 1 cup all-purpose flour
  • chocolate chips, to taste, for garnish

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Use the extra butter to grease a 9x9-inch baking dish, then line it with parchment paper. Use more of the extra butter to grease the parchment paper, then lightly dust it with the cocoa powder.

Step 3 -In a small saucepan over low heat, add the remaining 2/3 cup of butter and the unsweetened chocolate pieces and melt, stirring constantly, until it is smooth and glossy.

Step 4 -Place the saucepan on a wire rack. Add the vanilla extract to the melted chocolate mixture and stir to combine.

Step 5 -In the bowl of a stand mixer, beat the eggs and the salt together.

Step 6 -Add the sugar to the egg mixture and beat on high speed until the mixture has turned very white in color, about 10 minutes.

Step 7 -Reduce the stand mixer to low speed. Add the melted chocolate mixture to the egg mixture and beat until it is just combined.

Step 8 -Slowly add the flour to the batter mixture and stir until it is just combined.

Step 9 -Pour the batter into the prepared baking dish and place in on the middle rack of the oven.

Step 10 -Immediately reduce the heat to 350 degrees F and bake the brownies until a toothpick inserted into the center comes out not quite clean, about 40 minutes.

Step 11 -Place the baking dish on a wire rack and let the brownies cool, about 1 hour.

Step 12 -Invert the pan onto a flat surface, then pull out and discard the parchment paper.

Step 13 -Flip the brownies over and cut them into bars.

Step 14 -Serve the brownies, sprinkled with the chocolate chips.
