Ingredients

  • 1 cup rolled oats
  • 1/4 cup flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons coconut oil
  • 2 eggs
  • 1/4 cup maple syrup
  • 1/4 cup crunchy or creamy peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/3 cup chocolate chips

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Line an 8-inch square baking dish with parchment paper.

Step 3 -In a medium bowl, add the oats, the flour, the cinnamon, the baking powder, the baking soda, and the salt and stir to combine.

Step 4 -In a microwave-safe bowl, add the coconut oil and heat in the microwave, about 15-20 seconds.

Step 5 -Add the eggs to the coconut oil and whisk to combine.

Step 6 -Add the maple syrup, the peanut butter, and the vanilla extract to the egg mixture and mix until well-combined.

Step 7 -Add the egg mixture to the oat mixture and stir until just combined.

Step 8 -Fold the chocolate chips into the oat mixture.

Step 9 -Evenly spread the oat mixture in the bottom of the prepared baking dish.

Step 10 -Bake the oat mixture until it is golden-brown, about 20-25 minutes.

Step 11 -Let the oat mixture cool.

Step 12 -Cut into individual bars and serve.
