Ingredients

  • 2-3 pounds roast or eye round cut, fat trimmed
  • 3-4 cloves garlic, thinly sliced
  • olive oil, for brushing
  • kosher salt, to taste
  • fresh cracked pepper, to taste
  • 2 teaspoons dried rosemary, chopped

Directions

Step 1 -Allow the roast to sit, covered, until it reaches room temperature, about 1 hour.

Step 2 -Preheat the oven to 350 degrees F.

Step 3 -Using a sharp knife, pierce the roast several times, making each piercing about 1/2-inch deep and set about 1-inch apart.

Step 4 -Add a sliver of the garlic into each piercing, pushing it in completely. Doing so will infuse the meat more fully with the garlic flavor.

Step 5 -Brush the roast with olive oil and season with salt, pepper, and rosemary.

Step 6 -Place a meat thermometer into the center of the roast and place the roast in a roasting pan.

Step 7 -Roast until the thermometer reads 130 degrees F for rare, 140 degrees F for medium-rare, 150 degrees F for medium, and 155-160 degrees F for well done, about 1 hour-1 hour 15 minutes.

Step 8 -Remove the roast from the oven and let it rest for about 10-20 minutes.

Step 9 -Slice thin and serve.
