Ingredients

  • For the dressing:
  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1 teaspoon poppy seeds
  • salt, to taste
  • pepper, to taste
  • For the salad:
  • 3 cups baby spinach
  • 3 cups romaine lettuce or other crispy greens
  • 10 slices of bacon, cooked crisp and crumbled
  • 2 cups strawberries, washed and quartered
  • 1 ripe avocado, sliced
  • 1/4 cup almonds, sliced

Directions

Step 1 -In a medium bowl, whisk together the Greek yogurt, mayonnaise, white vinegar, sugar, poppy seeds, salt, and pepper.

Step 2 -In another medium-sized bowl, combine the baby spinach and romaine lettuce.

Step 3 -Divide the mixed greens between two big plates.

Step 4 -Top each plate with equal portions of the bacon, strawberries, avocados, and sliced almonds.

Step 5 -Drizzle both salads with the dressing.

Step 6 -Serve.
