Ingredients
- 6 pounds beef brisket, flat-cut and trimmed
- 3 tablespoons kosher salt
- 1 1/2 tablespoons black pepper, cracked
- 1 (18-ounce) bottle barbecue sauce
Directions
Step 1 -Line a rimmed baking sheet with aluminum foil.
Step 2 -Completely dry the brisket using paper towels.
Step 3 -Season the brisket with the salt and the pepper.
Step 4 -Cover the brisket with plastic wrap and refrigerate for at least 8 hours and up to overnight.
Step 5 -Preheat the oven to 300 degrees F. Remove the plastic wrap from the brisket.
Step 6 -Place a piece of parchment paper on top of the brisket.
Step 7 -Cover the pan with aluminum foil.
Step 8 -Insert an oven-safe thermometer into the thickest area of the brisket.
Step 9 -Place the brisket in the oven and cook until the thermometer reads 200 degrees F, about 3-4 hours.
Step 10 -Remove the brisket from the oven.
Step 11 -Uncover the baking sheet and brush the brisket with the barbecue sauce.
Step 12 -Continue baking for 1 hour.
Step 13 -Remove the brisket from the oven again and tent it with foil.
Step 14 -Let the brisket rest for 20 minutes.
