Ingredients
- 8 ounces bacon, chopped
- 4 ounces pickled jalapeños, chopped
- 2 cloves garlic, minced
- 4 cups fresh corn kernels
- 1 cup mayonnaise
- 4 green onions, chopped
- 2 cups mozzarella cheese, shredded, divided
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- tortilla chips, to taste, for serving
Directions
Step 1 -Preheat the broiler on high.
Step 2 -In an oven-safe skillet, add the chopped bacon and cook until brown and crispy.
Step 3 -Stir in the jalapeños and the garlic, cooking until the garlic is fragrant, about 30 seconds.
Step 4 -Stir in the corn, cooking and stirring until the corn looks golden and char marks appear.
Step 5 -Add the mayonnaise, the green onions, and 1 1/2 cups of the mozzarella cheese. Stir well, then add the salt and the pepper.
Step 6 -Sprinkle the remaining mozzarella cheese over top.
Step 7 -Place the skillet in the broiler and allow it to cook until golden-brown, about 3-5 minutes.
Step 8 -Serve with the tortilla chips!
