Ingredients

  • For the fritters:
  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/3 cup milk
  • 2 eggs
  • 3 tablespoons applesauce
  • 2 large Granny Smith or Honeycrisp apples, peeled and cored, diced
  • canola oil, to taste
  • For the glaze:
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla

Directions

Step 1 -In a medium bowl, sift together the sugar, the flour, the baking powder, the cinnamon, and the salt.

Step 2 -Create a well in the center of the dry ingredients and add 1/3 cup of the milk, the eggs, and the applesauce.

Step 3 -Stir it together just so that it is just combined, making sure not to over-mix it.

Step 4 -Gently fold in the diced apples.

Step 5 -In a heavy skillet or Dutch oven over medium-high heat, add the oil until it reaches a depth of about 1 1/2 inches. Heat the oil to 375 degrees F.

Step 6 -Working in batches, gently drop in about 1/4 cup of the batter into hot oil.

Step 7 -Carefully, spread the dough out slightly. You have to do it immediately after placing it in the oil to get the right shape.

Step 8 -Cook until the fritter is golden-brown, about 2 minutes on each side.

Step 9 -Place the fritters on paper towels or on a cooling rack to drain off the excess oil.

Step 10 -In a small bowl, whisk together the remaining milk, the powdered sugar, and the vanilla.

Step 11 -When the fritters have cooled, drizzle or dunk each fritter in the glaze, turning them over to make sure each of the sides are coated as desired.

Step 12 -Place the fritters on a wire rack to allow the glaze to dry and drip off any excess.

Step 13 -Serve warm!
