Juicy zucchini rounds, battered and breaded with sharp parmesan, are deep fried until crisp and golden-brown. That means that every part of A Slice Of Summer is crunchy, refreshing, and so delightfully summery! Dip them or eat them straight — there's no wrong answer when it comes to summer bliss!

Ingredients

  • 1 cup vegetable oil
  • 1 cup panko breadcrumbs
  • 1/2 cup parmesan cheese, freshly grated
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 medium zucchini, thinly sliced to 1/4-inch-thick rounds
  • salt, to taste
  • black pepper, to taste
  • dipping sauce, optional, to taste, of your choice, for serving

Directions

Step 1 -In a large, cast-iron skillet over medium-high heat, add the vegetable oil.

Step 2 -In a large bowl, add the panko breadcrumbs and the parmesan cheese and stir to combine.

Step 3 -In a separate large bowl, add the flour.

Step 4 -In a third large bowl, add the beaten eggs.

Step 5 -In batches, dredge the zucchini rounds in the flour, then in the eggs, and then in the panko mixture. Make sure to gently press down on the rounds so the panko mixture adheres.

Step 6 -In batches of about 5-6, add the dredged zucchini rounds to the hot oil and cook, flipping them once, until they are evenly golden and crispy, about 1 minute per side.

Step 7 -Transfer the cooked zucchini rounds to paper towels to drain and season them with the salt and the pepper.

Step 8 -Repeat until all of the zucchini rounds are fried.

Step 9 -Serve immediately with the dipping sauce.
