Just grab your trusty saucepan and quickly create this creamy, smooth, and slightly spicy dipping sauce that you love so much. Then, head to the pantry for the saltiest tortilla chips and you're ready to dig in... literally! Get ready to do a lot of digging and dipping and delighting at lightning speed with 15-Minute Nacho Cheese!
Ingredients
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1/2 cup milk, plus more, to taste
- 1/2 cup half-and-half
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon smoked paprika
- 1 (4-ounce) can diced jalapeños
- 2 cups Wisconsin cheddar cheese, shredded
- 1 cup Wisconsin Colby cheese, shredded
- kosher salt, to taste
- freshly ground black pepper, to taste
Directions
Step 1 -In a saucepan over medium heat, melt the butter.
Step 2 -Whisk the flour into the butter until it has lightly browned, about 1 minute.
Step 3 -Gradually whisk the milk into the butter mixture and cook, whisking constantly, until it is incorporated, about 1-2 minutes.
Step 4 -Stir the half-and-half, the garlic powder, the onion powder, and the paprika into the butter mixture until it thickens slightly, about 1 minute.
Step 5 -Stir the jalapeños, cheddar cheese, and the Colby cheese into the sauce mixture and cook until the cheese has melted, about 1-2 minutes. If the mixture is too thick, add more milk as needed.
Step 6 -Season the cheese with the salt and the pepper.
Step 7 -Serve immediately.
