Tender potatoes and everyone's secret obsession, grated Velveeta cheese, are added to a creamy mayo mixture, along with some sassy yellow onion and the always-unique, pimiento-stuffed Spanish olives. Yum! All that converges together and is topped with crispy, savory bacon for a flavor fantasia like you can't even imagine! Ingredients

  • 1 pound Velveeta cheese
  • 8 baking potatoes
  • water, to taste
  • 1 1/2 cups mayonnaise
  • 1 cup half-and-half
  • 1/2 cup yellow onion, chopped
  • 1 cup pimiento-stuffed Spanish olives, sliced
  • salt, to taste
  • black pepper, to taste
  • 6 slices bacon, cut into 2-inch-long pieces

Directions

Step 1 -Place the Velveeta cheese, still in the package, in the freezer and chill, about 45 minutes-1 hour.

Step 2 -While the cheese is freezing, in a large pot, add the potatoes and enough of the water to cover them and cook until they are tender, about 25-30 minutes.

Step 3 -Drain the water and let the potatoes cool completely.

Step 4 -Peel the potatoes and cut them into 1-inch-thick cubes. Set them aside.

Step 5 -Preheat the oven to 325 degrees F.

Step 6 -Coat a 9x13-inch baking dish with nonstick cooking spray.

Step 7 -Transfer the frozen Velveeta cheese from the freezer and remove it from the packaging.

Step 8 -Use the large holes on a box grater to grate the frozen cheese.

Step 9 -In a large bowl, add the mayonnaise and the half-and-half and whisk to combine.

Step 10 -Add the potato cubes, the grated cheese, the onion, the olives, the salt, and the black pepper to the mayonnaise mixture and stir to combine.

Step 11 -Spoon the potato mixture into the prepared baking dish and top with the bacon pieces.

Step 12 -Bake the potato salad, about 55 minutes.

Step 13 -Switch the oven to the broil setting and broil the potato salad until the bacon pieces are crisp, about 5 minutes.

Step 14 -Transfer the baking dish to a wire rack and let the potato salad stand, about 5 minutes.

Step 15 -Serve.
