A Chinese food classic comes to your kitchen without the traditional white box! Vegetable Chow Mein is tender noodles and pan-seared vegetables all coated in that beloved chow mein brown sauce! Sweet, savory, tangy, and so, so easy to make, Vegetable Chow Mein is something everyone can and will love from the very first bite!
Ingredients
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons dry sherry
- 2 teaspoons sugar
- 1 teaspoon sesame oil
- 1/2 teaspoon freshly ground black pepper
- 10 ounces chow mein noodles
- 4 cups boiling water
- 2 tablespoons extra-virgin olive oil
- 1/2 small onion, thinly sliced
- 1 carrot, peeled and julienned
- 1 (8-ounce) package snow peas, thinly sliced on the bias
- 6 canned baby corn, drained and cut in half
- 1 cup savoy cabbage, shredded
- toasted sesame seeds, optional, to taste, for garnish
Directions
Step 1 -In a mixing bowl, add the soy sauce, the oyster sauce, the sherry, the sugar, the sesame oil, and the black pepper and whisk to combine. Set the sauce mixture aside.
Step 2 -In a large, shallow baking dish, add the noodles and the boiling water and let the noodles sit for 10 minutes.
Step 3 -Drain the noodles and set them aside.
Step 4 -In a large skillet over a wok over high heat, add the olive oil.
Step 5 -Add the onions and the carrots to the hot oil and cook, while stirring, until they are just starting to soften, about 2 minutes.
Step 6 -Add the snow peas and the baby corn and cook, about 2 minutes.
Step 7 -Add the cabbage and cook until it starts to soften, about 1 minute.
Step 8 -Add the noodles and the sauce mixture to the vegetable mixture and toss until combined.
Step 9 -Cook until the vegetables have blistered slightly and the sauce coats the noodle mixture, about 2-3 minutes.
Step 10 -Serve garnished with the sesame seeds.
