- 1 medium yellow onion, sliced
- 4 cloves garlic, sliced thinly
- 2 teaspoons Italian seasoning
- 1/4 teaspoon crushed red pepper flakes
- 3 cups beef broth, divided
- French rolls, to taste, sliced
- Chicago-style hot giardiniera, such as Marconi™, to taste, for serving
Directions
Step 1 -Place a large skillet over medium-high heat.
Step 2 -Evenly season both sides of the chuck roast with the salt and the pepper.
Step 3 -Add the oil and the seasoned chuck roast to the heated skillet and sear until the beef is browned on all sides, about 2-3 minutes per side.
Step 4 -Transfer the seared chuck roast to a slow cooker.
Step 5 -In the same skillet over medium-low heat, add the onions, the garlic, the Italian seasoning, and the crushed red pepper and sauté, stirring occasionally, until the onions start to soften, about 2-3 minutes.
Step 6 -Add 1 cup of the beef broth to the onion mixture and use a wooden spoon to loosen any of the browned bits from the bottom of the skillet.
Step 7 -Simmer the onion mixture until the liquid is slightly reduced, about 1-2 minutes.
Step 8 -Pour the onion mixture and the remaining beef broth over the seared chuck roast.
Step 9 -Cover the slow cooker and cook the chuck roast mixture until the meat is very tender, about 4-6 hours on high heat or about 6-8 hours on low heat.
Step 10 -Use two forks to shred the chuck roast into smaller pieces in the slow cooker then mix it with the juices.
Step 11 -Evenly arrange the shredded beef between each of the French rolls.
Step 12 -Serve the sandwiches topped with the hot giardiniera.
