Ingredients
- 3 cups medium egg noodles, uncooked
- 1 pound ground round
- 1 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano, undrained
- 1 (10-ounce) can diced tomatoes and green chiles, undrained
- 1 (6-ounce) can tomato paste
- 1 teaspoon salt
- 1/2 teaspoon dried Italian seasoning
- 1/4 teaspoon pepper
- 5 green onions, chopped
- 1 (8-ounce) container sour cream
- 3 ounces cream cheese, softened
- 1 cup sharp cheddar cheese, shredded
- 1 cup parmesan cheese, shredded
- 1 cup mozzarella cheese, shredded
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Lightly grease a 9x13-inch baking dish.
Step 3 -Prepare the egg noodles to al dente according to package directions.
Step 4 -In a large skillet over medium heat, add the ground round and cook until browned and crumbled, about 5-8 minutes.
Step 5 -Stir the can of seasoned tomatoes, the can of the tomatoes and chiles, the tomato paste, the salt, the Italian seasoning, and the pepper into the meat mixture.
Step 6 -Bring the mixture to a boil, then reduce the heat and simmer uncovered for 5 minutes.
Step 7 -Stir the cooked noodles, the green onions, the sour cream, and the cream cheese together until blended.
Step 8 -Spoon the egg noodle mixture into the prepared baking dish.
Step 9 -Top the noodle layer with the beef mixture and sprinkle with the cheddar, the parmesan, and the mozzarella.
Step 10 -Cover and bake for 35 minutes.
Step 11 -Uncover and bake until the cheese is melty, about 5 minutes.
Step 12 -Let stand for 10 minutes.
