  • For the crust:
  • 1 cup shortbread cookies, crushed
  • 1/2 cup macadamia nuts, finely chopped
  • 1/4 cup sugar
  • 1/3 cup butter, melted
  • For the filling:
  • 1 (8-ounce) package cream cheese, softened
  • 1 (14-ounce) can sweetened condensed milk
  • 1/2 cup Key lime juice or lime juice
  • 1 cup heavy whipping cream
  • 1/4 cup macadamia nuts, coarsely chopped

Directions

Step 1 -Grease a 9-inch pie plate.

Step 2 -In a small bowl, mix the cookie crumbs, 1/2 cup of the macadamia nuts, and the sugar together.

Step 3 -Stir the melted butter into the pie crust mixture.

Step 4 -Press the pie crust mixture into the bottom and up the sides of the prepared pie plate.

Step 5 -Refrigerate the crust for 30 minutes.

Step 6 -In a large bowl, beat the cream cheese until it is smooth.

Step 7 -Beat the milk and the lime juice into the cream cheese until it is blended.

Step 8 -Evenly spread the filling mixture into the pie crust.

Step 9 -Refrigerate the pie, covered, for at least 4 hours and up to overnight.

Step 10 -In a small bowl, beat the heavy whipping cream until soft peaks form.

Step 11 -Spoon or pipe the whipped cream onto the pie and sprinkle with the remaining macadamia nuts.

Step 12 -Slice and serve.
