When the temperatures are warmer and the days are longer, Tequila Lime Grilled Chicken is what you'll be craving! The juicy grilled chicken encompasses the flavors of summer thanks to its sweet and spicy Tex-Mex-inspired marinade. Put Tequila Lime Grilled Chicken on a big, fresh salad or serve it with some colorful grilled veggies, and every meal will taste like a summertime barbecue!
Ingredients
- 3 tablespoons olive oil
- 3 tablespoons tequila
- 1 tablespoon lime zest
- 4 cloves garlic, minced
- 1 1/4 teaspoons ground ancho chili pepper
- 1/2 teaspoon ground coriander
- 1/4 teaspoon dried oregano
- 1 1/4 teaspoons salt
- 1/2 teaspoon ground black pepper
- 2 teaspoons honey
- 4 chicken breasts, boneless and skinless, pounded 1/2-inch-thick
- 1 lime, optional, sliced into wedges, for serving
Directions
Step 1 -Combine the olive oil, the tequila, the lime zest, the garlic, the ancho chili pepper, the coriander, the oregano, the salt, the pepper, and the honey in a 1-gallon resealable freezer bag.
Step 2 -Close the bag and massage the marinade around to mix.
Step 3 -Add the chicken breasts to the freezer bag and massage the marinade into the meat until they are evenly coated.
Step 4 -Seal the bag and place it in a bowl in the refrigerator to marinate for at least 6 hours and up to overnight.
Step 5 -Preheat the grill to high.
Step 6 -Grease the grill grates.
Step 7 -Place the marinated chicken breasts on the grill and spoon any of the remaining marinade from the bag over the top of the meat.
Step 8 -Grill, covered, until the internal temperature of the chicken has reached 165 degrees F, about 2-3 minutes per side, and only flipping once.
Step 9 -Serve immediately with the lime wedges.
