Ingredients

  • vegetable oil, to taste
  • 12 slices bacon, thick-cut
  • 3 cups chicken breast, cooked, shredded or chopped
  • 2 medium carrots, sliced
  • 1/2 cup celery, chopped
  • 1 (10.5-ounce) can condensed chicken soup
  • 6 cups low-sodium chicken stock
  • 1 cup whole milk
  • 3/4 cup cream cheese, softened
  • 1 (1-ounce) packet ranch dressing mix
  • 8 ounces thin spaghetti or angel hair
  • 1 1/2 cups mild cheddar cheese, grated

Directions

Step 1 -Heat the vegetable oil in a medium skillet.

Step 2 -Add the bacon slices and cook until crispy, about 4-5 minutes.

Step 3 -Transfer the bacon slices to paper towels to drain, then when it is cool enough to handle, crumble the bacon. Set it aside.

Step 4 -In a large soup pot, add the chicken, the carrots, the celery, the soup, the chicken stock, the milk, the cream cheese, the ranch dressing mix, and the reserved bacon.

Step 5 -Bring the soup mixture to a boil, stirring occasionally.

Step 6 -Reduce the heat to low and let it simmer for 20-25 minutes.

Step 7 -Add the spaghetti and the grated cheese.

Step 8 -Let it simmer until the spaghetti is cooked to al dente, according to the package directions.

Step 9 -Serve.
