  • olive oil, to taste
  • 3 chicken breasts, boneless and skinless, sliced
  • 1/2 red onion, sliced
  • 1/2 red bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic, minced
  • 1 teaspoon salt, plus more, to taste
  • 1/2 teaspoon black pepper, plus more, to taste
  • 2 cups chicken broth
  • 1 (16-ounce) package angel hair pasta
  • 1 cup parmesan cheese, grated or shredded

Directions

Step 1 -In a skillet over medium-high heat, add the olive oil.

Step 2 -Add the chicken breast slices to the hot oil and cook, stirring occasionally, until they begin to brown, about 2-4 minutes.

Step 3 -Add the onions, the red bell peppers, and the green bell peppers to the hot oil and cook, while tossing, until they begin to soften, about 2-3 minutes.

Step 4 -Add the Italian seasoning, the garlic, 1 teaspoon of the salt, and 1/2 teaspoon of the black pepper to the chicken mixture and stir to combine.

Step 5 -Add the chicken broth to the chicken mixture and stir to combine.

Step 6 -Bring the chicken mixture to a boil.

Step 7 -Cover the skillet and reduce the heat to low.

Step 8 -Let the chicken mixture simmer until reduced and the chicken slices reach an internal temperature of 165 degrees F, about 3-5 minutes.

Step 9 -In a large pot of salted, boiling water, add the angel hair pasta and cook it to al dente, according to the package directions.

Step 10 -Drain the pasta.

Step 11 -Add the parmesan to the chicken mixture and stir to combine.

Step 12 -Taste the chicken mixture for seasoning and add the extra salt and the extra black pepper, as needed.

Step 13 -Serve the pasta topped with the chicken mixture.
