Big seasonal flavors in a small package. That's the good stuff! Taste-of-Summer Rolls are light and flavorful, filled with tamari (a Japanese soy sauce with extra umami flavor), earthy mushrooms, tender soba noodles, and fresh greens, with a nutty, creamy, and spicy peanut sauce for dipping! These are a great appetizer for an Asian-inspired cookout or for a mid-afternoon snack; they're so easy and quick to make! Taste-of-Summer Rolls let the season run wild on your tongue!

Ingredients

  • For the mushrooms:
  • 1/2 teaspoon extra-virgin olive oil
  • 1 cup enoki or shiitake mushrooms, sliced
  • 1/2 teaspoon tamari, can substitute soy sauce
  • For the spring rolls:
  • 4 ounces soba or rice noodles, cooked
  • 3 tablespoons peanut sauce, homemade or store-bought, plus more, to taste
  • 4 Vietnamese rice spring roll wrappers
  • warm water, to taste
  • 1 avocado, sliced
  • fresh basil leaves, to taste
  • mint leaves, to taste
  • 1/4 cup microgreens
  • tamari, to taste, for serving

Directions

Step 1 -In a small skillet over medium heat, add the oil.

Step 2 -Add the mushrooms to the oil and cook until they are browned and softened, about 5 minutes.

Step 3 -Transfer the skillet from the heat.

Step 4 -Add 1/2 teaspoon of the tamari to the mushrooms and toss to combine.

Step 5 -In a bowl, add the noodles and 3 tablespoons of the peanut sauce and toss until the noodles are well-coated.

Step 6 -Dip the rice wrappers, 1 at a time, into the warm water for 5 seconds.

Step 7 -Transfer each dipped rice wrapper to a clean towel to drain.

Step 8 -In the center of each of the rice wrappers, add an even amount of the noodles, the mushrooms, the avocado, the basil, the mint, and the microgreens.

Step 9 -Wrap and tuck the sides of the rice wrappers, then wrap and tuck the bottom flap.

Step 10 -Carefully roll the wrapper until it is tightly closed.

Step 11 -Serve the rolls with the extra peanut sauce and the extra tamari.
