Ingredients

  • 6 ounces brown rice noodles, such as Thai Kitchen® brown rice noodles
  • 3 tablespoons canola oil
  • 2 cups scallions, sliced
  • 8 ounces medium shrimp, peeled and deveined
  • 1 large egg
  • 1/3 cup unsalted peanuts, chopped, divided
  • 3 tablespoons no-salt-added ketchup
  • 2 tablespoons fresh lime juice
  • 1 1/2 tablespoons sriracha sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon water
  • 2 tablespoons fresh cilantro, chopped, for garnish

Directions

Step 1 -In a large pot of salted, boiling water, cook the noodles to al dente, according to the package directions. Drain the noodles.

Step 2 -In a large cast-iron skillet over high heat, add the oil.

Step 3 -Add the scallions and the shrimp to the heated oil and cook, stirring often, until the scallions are bright green, about 1-2 minutes.

Step 4 -Add the egg to the shrimp mixture and cook, stirring constantly, until the shrimp reaches an internal temperature of 145 degrees F and the egg is cooked, about 1 minute.

Step 5 -Add the cooked noodles, 1/2 of the peanuts, the ketchup, the lime juice, the sriracha sauce, the fish sauce, and the water to the shrimp mixture and toss well to combine.

Step 6 -Serve the shrimp mixture topped with the remaining peanuts and the cilantro.
