Ingredients

  • 2 (6-8-ounce) salmon fillets, skin-on, 1-inch thick
  • 1/2 teaspoon kosher salt, plus more to taste
  • freshly ground black pepper, to taste
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • lemon wedges, for serving

Directions

Step 1 -Position an oven rack 6 inches from the heat source in the oven.

Step 2 -Preheat the broiler on high.

Step 3 -Line a sheet pan with aluminum foil.

Step 4 -Season the salmon fillets all over with 1/2 teaspoon of the salt and the black pepper.

Step 5 -Place the salmon on the prepared sheet pan, skin-side down.

Step 6 -In a small bowl, whisk the oil and the mustard until it is well-mixed.

Step 7 -Brush the tops and the sides of the salmon with the mustard mixture.

Step 8 -Broil until the salmon is opaque with a deep brown crust and cooked through to at least 145 degrees F internally, about 6-8 minutes.
